Lemon Parsley Salmon with New Potatoes

INGREDIENTS
SERVES 4

  • 4 salmon fillets
  • Bunch of parsley
  • Juice of ½ a lemon
  • ½ lemon (chopped into slices)
  • ½ onion (diced)
  • Cherry tomatoes
  • New potatoes
  • Green beans
  • Olive oil
  • 1 tsp of butter

DIRECTIONS

  1. Preheat the oven to 200°C/392°F
  2. Begin by placing the salmon fillets into a glass dish on top of foil
  3. Lightly sprinkle some olive oil over the fillets
  4. Chop the onion into diced pieces and cut the stems off the parsley
  5. In a bowl, mix together the lemon juice, parsley and onions
  6. Coat the fillets in the mixture, ensuring even distribution
  7. Place a couple cherry tomatoes and lemon slices around the salmon fillets
  8. Cover the salmon with foil and pop into the oven – bake for 30-35 mins
  9. Clean the potatoes,  cover with water and add a dash of olive oil and a pinch of salt
  10. Bring the potatoes to boil and then let simmer for about 20-25 mins until tender
  11. Add the green beans to boiling water and cook for about 4 mins
  12. Once the salmon and potatoes are cooked, plate up and add a teaspoon of butter to the potatoes.  ENJOY!
